Zero Waste
No Meat. We don’t eat meat. We carefully select our ingredients to minimize environmental impact. That’s why we rely on conscious and responsible supply chains, supporting local and neighborhood producers.
Bread. Our bread is made by the Ricchiuti family bakery, a historic family of bakers just a few steps away from us. They use only selected grains, both for the 100% rye bread and the sourdough bread.
Fruits and Vegetables. Always seasonal, our fruits and vegetables come from nearby farms and are distributed directly by farmers at the neighborhood market.
Dairy Products. Our dairy products come from free-range farms that do not practice slaughtering or induce lactation; availability varies depending on milk production.
Oils and Preserves. Our olive oil is produced in-house, while our preserves come from Savelletri, made with ingredients from regenerative agriculture.
Aromatics. Our spices are homegrown—cultivated directly on our rooftop to ensure unmatched freshness and fragrance.

We offer a selection of blended wines (made from multiple grape varieties) and single-origin wines (from a single grape variety), sourced both from Italy and abroad. They are crafted by small winemakers dedicated to preserving the culture and identity of their land, always respecting nature.

Our coffee is produced by Il Manovale, an artisanal micro-roastery founded by a team of passionate coffee professionals. Their mission is to bring fresh, traceable, and handcrafted coffee to homes and cafés, making coffee a conscious choice.
Honey
Libertà – Honey from the Neighborhood
Our honey is produced in the rooftop apiary of Imago Plus, an initiative developed in collaboration with the Municipality of Bari as part of the project A Shop Is More Than Just a Shop. Our apiary, called Alleanza (Alliance), is the first in Italy to be located on a commercial building in a central urban area. It is based in the Libertà neighborhood, the most densely populated district in the city of Bari. This honey carries the flavors of rosaceous fruits, apricots, and peaches. It is a testament to a rich and hidden plant biodiversity that must be protected. The apiary is cared for by Angelica, Antonio, Ilaria, and Patrizia, and represents the first step toward envisioning a space, a city, and a way of doing business rooted in the values of anti-speciesism and care.
